I want to start by wishing the happiest of birthdays to the girl who has stood by my side since the days of braces, unlined bras, and hemp choker necklaces. “Back in the day” we would gather our closest girlfriends and the boys we were crushing on for good ol’ fashioned middle-school birthday parties: complete with bobbing for apples, never-have-i-ever, and generally sitting on opposite sides of the room.
Now that we are so-called ‘adults’, parties consist of potlucks, Cards Against Humanity, and friendly games of Pictionary. Actually…. that’s not as different as I thought…
October means the start of rich, warm, savory comfort dishes. Crock Pot simmered stews, cheesy dips, and melty casseroles. But it also means PUMPKIN EVERYTHING. I’m not ashamed to admit that the next 2-3 months are going to be so full of pumpkin swirl and pumpkin spice that I’ll probably be ready for 10 months off of it by Christmas. And while I can honestly say that my husband and I eat a really clean diet, there’s room for a cheat meal every now and then! What better place to cheat than at a potluck!
Here’s a new recipe that I decided to try just for my friend Kelsey’s birthday get-together:
What you’ll need…
8 oz Cream Cheese
8 oz Cool Whip or other whipped topping
1 15oz can Pumpkin
1.5 cups Powdered Sugar
1 tbsp Pumpkin Pie Spice
Dash Vanilla Extract
1 tsp Ground Cinnamon (garnish)
Graham Crackers or other dipping snack
What to do…
1. Combine softened cream cheese, Cool Whip, pumpkin, powdered sugar, pumpkin pie spice, and vanilla extract in a large bowl. Mix well until consistent texture and color.
2. Spoon into serving bowl & garnish with cinnamon. Dip graham crackers, Teddy Grahams, Nilla Wafers, animal crackers, or countless other delicious dippers!
